This Tandoori Hot Chicken Sandwich is your answer to all hot chicken cravings. It’s crispy, spicy, buttery, and packed with deep smoky flavors.

Ingredients

The Tandoori Brine

  • 6 boneless chicken breast fillets (flattened & cut into 3” x 3” squares)
  • ¼ gallon (32 oz) water
  • 6 tablespoons (3 oz) Anmol Tandoori Masala
  • 2 teaspoons (0.33 oz) salt
  • 2 tablespoons (1 oz) sugar
  • 1 tablespoon (0.5 oz) yellow mustard (optional)

The Tandoori Coat

  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon baking powder
  • 2 teaspoons paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt

The Tandoori Fried Chicken

  • 32 oz frying oil (for deep frying, may reuse for Tandoori Oil)

The Tandoori Oil

  • 1 ½ cups cooking/frying oil (reuse from frying if preferred)
  • 1 cup (8 oz) butter
  • 4 tablespoon (2 oz) Anmol Tandoori Masala
  • 4 tablespoon (2 oz) brown sugar

The Tandoori Mayo

  • 1 cup (8 oz) mayonnaise
  • 1 tablespoon (0.5 oz) Anmol Tandoori Masala
  • 1 tablespoon honey
  • 2 teaspoons vinegar

The Assembly

  • 6 brioche buns (or preferred buns)
  • Tandoori Mayo (about 2 teaspoons per bun)
  • Coleslaw (1 tablespoon per bun, optional)
  • Tandoori Fried Chicken
  • 2-3 sliced dill pickles per bun

Method

Step 1: Prepare the Chicken (Tandoori Brine)

  • In a bowl, whisk together water, Anmol Tandoori Masala, salt, sugar, and mustard.
  • Submerge flattened, cut chicken fillets into the brine.
  • Cover and refrigerate for 12-24 hours for best results.
  • After brining, remove chicken, pat it dry, and set aside.

Step 2: Prepare the Breading (Tandoori Coat)

  • In a deep, flat dish, whisk together flour, cornstarch, baking powder, paprika, black pepper, and salt.
  • In a separate bowl, crack eggs, add a pinch of salt, and whisk until smooth.
  • Preheat your deep fryer or air fryer to 350°F.

Step 3: Bread the Chicken

  • Coat each chicken fillet in flour mixture, pressing firmly to ensure full coverage.
  • Dip the chicken into the egg mixture, making sure it’s completely coated.
  • Return to the flour mixture for a final coat, ensuring an even, thick breading.
  • Place breaded chicken on a tray and let it rest while the oil heats.

Step 4: Fry the Chicken

🔥 Deep Fryer Method:

  • Gently drop the coated chicken into hot oil (350°F).
  • Fry for 5-7 minutes until golden brown.
  • Internal temperature must reach 165°F.

⚡ Air Fryer Method:

  • Set to 375°F.
  • Place chicken in a single layer, not touching.
  • Cook for 12-16 minutes, flipping halfway through.

Tip: Once fried, place the chicken on a rack (not a plate) to prevent fogginess.

Step 5: Make the Tandoori Oil

  • Heat a saucepan over medium-low heat.
  • Add oil and butter, stirring until fully melted.
  • Stir in Anmol Tandoori Masala and cook for 2-3 minutes, until the oil turns deep red and aromatic.
  • Add brown sugar, stirring until dissolved.
  • Pour the Tandoori Oil into a deep bowl for dipping the fried chicken.

Step 6: Make the Tandoori Mayo

  • In a small bowl, whisk together mayonnaise, Anmol Tandoori Masala, honey, and vinegar.
  • Stir until smooth and creamy.

Step 7: Assemble the Sandwich

  • Toast the Brioche Buns in a pan with Tandoori Oil or neutral oil until golden brown.
  • Spread Tandoori Mayo on the top and bottom bun.
  • Add a layer of coleslaw (optional, but adds crunch and freshness).
  • Dip each Tandoori Fried Chicken piece into the Tandoori Oil, then place on the bun.
  • Top with sliced dill pickles.
  • Cover with the top bun and gently press down.
