Malai Boti Recipe – Tender, Love & Care

Loved by many, perfected by a few—this is Malai Boti at its finest.

Everyone has their own definition of love  and their own way of showing it. But we can all agree: love should be tender, creamy, and juicy—never dry, never dull. And if it’s done right, you’ll never have to worry about being disappointed.

Sounds familiar? That’s because Anmol’s Malai Boti Marinade is love in its purest form. It’s rich and creamy, coats every bite, and has a subtle heat thanks to fresh Thai chilies at its core. But don’t be fooled—this one plays it cool. 

Ingredients

Malai Boti Chicken

  • 2 lbs boneless chicken breast, cut into 1” cubes
  • 6-8 tbsp (4 oz) Anmol Malai Boti Marinade
  • 4 tbsp (2 oz) water (to help evenly coat the chicken)
  • Bamboo skewers 

Malai Boti Sauce (Optional, but highly recommended)

  • 2 oz butter
  • 1 tbsp Anmol Malai Boti Marinade
  • 1 oz water
  • 2 oz heavy whipping cream
  • Salt to taste

Method

Step 1: Marinate the Chicken

  1. In a mixing bowl, combine the chicken, Anmol Malai Boti Marinade, and water.
  2. Mix thoroughly to ensure the marinade evenly coats each piece.
  3. Cover and let it marinate for 12-24 hours. (The longer, the better—patience pays off with tender, flavorful chicken.) 

Step 2: Skewer the Chicken

  1. Thread 4-6 pieces of chicken onto 6”-8” bamboo skewers, ensuring they are firmly placed and touching each other.
  2. (Optional) Add diced yellow onions between each piece for extra flavor. 

Step 3: Cooking Options

⏲ Oven  (Recommended for Even Cooking)

  • Preheat the oven to 325°F (160°C).
  • Place skewers on a baking tray with a foil liner and roast for 10-12 minutes.
  • Pull out from the oven and wrap it in the same foil,  return to the oven for 8-10 more minutes to keep it soft and juicy.

🍳 Pan Searing  (For a Crispy Exterior)

  • Heat oil or ghee in a frying pan over medium heat.
  • Sear the chicken on all four sides for 30-45 seconds per side.
  • Reduce heat to low, cover, and let cook for 5-10 minutes.

🔥 Grilling (For a Smoky Flavor)

  • Preheat the grill to high heat.
  • Sear each side for 45-60 seconds to get a nice char.
  • Wrap in foil and let it sit on low heat for 5-10 minutes to retain moisture.

Step 4: Malai Boti Sauce (Optional, but Worth It!)

  1. In a saucepan, melt 2 oz butter over low heat. 
  2. Add 1 tbsp Anmol Malai Boti Marinade and 1 oz water, stirring well.
  3. Once the marinade is heated through, stir in 2 oz heavy whipping cream.
  4. Season with salt to taste, and drizzle over the Malai Boti before serving.

Serving Suggestions

🌿 Best Chutney: Anmol’s Cilantro Chutney or A Simple Green Raita

Pro Tips for the Best Malai Boti

Marinate overnight for ultra-soft, melt-in-your-mouth chicken. 
For extra creaminess, brush some melted butter on top before serving. 
Want that tandoori-style char? Broil for 1-2 minutes at the end of baking.
